Fresh Lime Juice - 15 ml

Method
Muddle the mint with the juice gently until it has released its "minty goodness", in the bottom of a Collins glass, add the Calypso Rum, fill the glass with ice, pour Ginger Beer and stir until the glass becomes frosty, top up with crushed ice if desired.
